Salt, Sugar, and the Tiny Palate You're Calibrating Right Now

A lot of parents know they shouldn't add salt or sugar to baby food. Very few know why — and the real reason is far more important than the one you've probably heard.


The Answer You Already Know — And Why It's Incomplete

Ask any paediatrician why babies shouldn't have salt, and you'll get the kidney answer: infant kidneys are immature and can't process excess sodium the way adult kidneys can. This is true. A baby's renal system isn't fully developed until around 12 months, and overloading it with sodium creates real physiological strain.

But here's what that answer misses: the kidney problem is temporary. The palate problem is not.

When we add salt or sugar to a baby's food, we're not just giving them something their body struggles to process. We're teaching their developing sensory system what food is supposed to taste like. And that lesson sticks — far longer than anyone warns you about.


What's Actually Happening in That Tiny Brain

Between 6 and 18 months, a baby's flavour perception is in its most receptive phase. Research by Mennella and Beauchamp, published in the Journal of Pediatric Gastroenterology and Nutrition (2009), demonstrated that early flavour exposure during this window shapes long-term food preferences with remarkable persistence. The tastes a child encounters repeatedly during this period become their baseline — their definition of what food is supposed to taste like.

Salt and sugar are both flavour amplifiers. They don't just add taste — they crowd out subtlety. When a baby's first foods are salted or sweetened, their palate learns to expect that level of intensity. A plain dal, a simple roasted vegetable, a khichdi spiced only with cumin and turmeric — all of them become, by comparison, flat. Unacceptable. Boring.

This is why a three-year-old raised on heavily seasoned food refuses vegetables. It is not wilfulness. It is calibration. Their palate was set early, and it is working exactly as it was trained to.


The Sugar Case Deserves Its Own Paragraph

With salt, parents often understand the concern instinctively. With sugar, there is more confusion — particularly because of the natural sugars found in fruit. The distinction worth making is this: it is not the sugar in a mango that shapes the palate in a problematic way. It is the added sugar in commercial snacks and pouches that delivers a hit of sweetness far beyond what any whole fruit can.

Research published in Appetite (Beauchamp & Moran, 1982) found that infants who were regularly given sweetened water showed a significantly stronger preference for sweet solutions compared to infants who were not — and that preference persisted well beyond the study period. The palate does not just notice sweetness. It adjusts its expectations upward. And once those expectations are set high, everything that isn't sweet enough simply falls short.

This is the mechanism behind the child who will eat mango but not dal. Both are food. Only one delivers the hit the palate was trained to expect.


What This Means in Practice

None of this requires anxiety. It requires awareness.

A baby eating home-cooked food with a pinch of cumin, coriander, and turmeric — without added salt or sugar — is not eating bland food. They are eating food that is flavourful, aromatic, and texturally rich. They are not missing anything. They are, in fact, receiving something that most children in the world never get: access to the full spectrum of taste before the window closes.

The flavour window does not stay open forever. By the time a child is two, preference patterns are already consolidating. That does not mean a late start is hopeless — but it does mean the effort required to broaden a palate doubles, and then some.

What happens in your kitchen over the next six to twelve months is not a small thing. It is, genuinely, one of the most lasting contributions you will make to this child's relationship with food.
